Veg Jalfrezi is one the most popular restaurant dishes of all times.
Its a mild spiced gravy with a lot of fresh veggies stirred fried together in a tangy tomato sauce. It pairs well with roti or rice.
Ingredients:
Serves 4 persons
For stir frying:-
2 tbsp oil
1 onion diced
20 beans chopped
1 carrot chopped
3 tbsp green peas
1 tomato sliced
10 babycorns chopped
1 yellow capsicum
1 green capsicum
1 red capsicum
1 tsp salt
For Sabji:-
2 tbsp oil
2 tsp cumin
2 tsp kasuri methi
2 tsp ginger-garlic-coriander paste
2 green chilli (1 by 2)
2 onions chopped
1 tsp turmeric
1 tbsp chilli powder
2 tomatoes pureed
2 tbsp tomato sauce
1 tsp garam masala
2 tbsp chopped coriander
Salt to taste
Method:
1. Firstly in a pan heat 2 tbsp oil. Add 1 onion, 20 beans, 1 carrot, 1 tomato, 10 babycorns, 3 tbsp green peas, 1 yellow capsicum, 1 green capsicum, 1 red capsicum, 1 tsp salt and stir fry on high flame till all the veggies shrink yet remain crunchy. Keep it aside.
2. In the other pan, heat 2 tbsp oil. Add 2 tsp cumin, 2 tsp kasuri methi, 2 tsp ginger-garlic-coriander paste.
3. Saute until everything turns aromatic.
4. Now add 2 onions chopped and saute until onions turn golden brown.
5. Then add 1 tsp turmeric, 1 tbsp chilli powder.
6. Saute well then add 2 tomatoes pureed and cook it for 5 minutes.
7. Now add 2 tbsp tomato sauce and mix well forming saucy consistency.
8. Add in sauteed veggies, along 1 tsp garam masala, 2 tbsp chopped coriander and salt to taste.
9. Mix well keeping the flame on high.
10. Enjoy veg jalfrezi with roti or rice.
